This cooktop, though, is so versatile, so the answer is YES I will use this a lot. In fact, I have cooked at least one meal a day on it in the 10 days I've had it.
There is an App you install on your phone that allows you to operate the cooktop in multiple modes, and it is very easy and intuitive to use.
It comes with a probe. For sous vide, you plug in the probe that comes with it, choose the setting, immerse the probe in the water by hanging it on the side of the pot, and it keeps the temperature consistent and times the cooking for you. I also tested it out to maintain cooking temperature boiling corn on the cob, and again inserted into chicken breast, and that probe worked great and timed the cooking perfectly.
And the App offers different recipes and step by step videos to walk you through. I made a sous vide salmon which was featured, with the same ingredients I typically use, and it turned out moist and flavorful and cooked to the doneness I prefer.
I (of course know how to make them) also tried the scrambled egg recipe on the App, mostly because I wanted to get the hang of the induction top, and hubby declared them the fluffiest eggs I have ever made.
And bonus- it takes the guess work out of the temperature control, because the cooktop matches up the temperature to the recipe. Yes, it does regular old school cooking through a manual setting. During big holiday events, I think this will also be useful because I never seem to have enough burners. This may also be a good option instead of a hotplate, because it really cooks well, and it big enough to handle even larger pots and is safer to operate.
You do need induction compatible cookware (most of mine is anyway).
The major flaw with this is that the coil is pretty small. I'm guessing induction burner manufacturers make the surface much larger than the coil to fool people into thinking the coil is much larger than it actually is. The problem with a small coil is that if you use a pan that matches the size of the surface instead of the size of the coil, only the center of the pan will heat up. You'll get some residual heat outside of the coil, but most of the time it won't be enough to cook things outside of the coil. You can tell when boiling water, cooking oatmeal, or even searing meat that only the center is boiling and browning the food.
The other problem with small coils is if they're used on big pans, the center will get very hot and the area of the pan outside the coil will be comparatively cold. I thought my cast iron was indestructible, but this burner managed to warp it because of the temperature difference.
The user interface also leaves something to be desired. You turn on the burner by first tapping on the plus button to choose a power level, then you press the power button. This is very unintuitive and I still have not gotten used to it. I think that the power button should be pressed first in order to turn on the burner and then the power level can be increased.
The app is also pretty clunky. Connecting to the burner is finicky. Sometimes, when I connect to the burner, I'll pull up the menu to begin temperature adjustments from the app. But the app will show that the burner is disconnected even though I just connected it.
I strongly dislike the very limited temperature range that I can set the cooktop and thermometers to. The maximum is about 350° F. This is very limiting because allowing it to go about 100° higher would allow me to sear meat at the highest temperature before the smoke point of the cooking oil. This increased temperature limit would greatly reduce smoke detector beeping and smokey apartments.
All of this being said, it's still an induction burner and it's pretty amazing to see it heat up so fast. Clean up is a breeze and much much faster than a gas stovetop. The handle on my cast iron takes much longer to become too hot to handle compared to gas and the kitchen doesn't get anywhere near as hot.
I think the best way to use this burner is to use a smaller pan. Maybe a 10 or an 8 inch pan to get better heat distribution. Unless you are cooking liquids, in which case you can just stir.
Overall, I think it's worth a shot if you can get it affordably.
